Almond Coconut Balls
This is my take on Almond Coconut Balls based on a recipe given to me by a colleague, with the added benefits of protein powder, nuts and coconut flakes. No cooking required, and super easy to make. Make sure to keep these in the fridge though, as the coconut oil chocolate can melt at room temperature.
1 1/2 cups of pitted dates (medjool dates are best, but expensive!)
1/2 cups of all natural creamy almond butter.
1/4 cup of coconut oil
1/4 cup cocoa powder
2 tablespoons of maple syrup (optional)
1 tablespoon of vanilla protein powder
1/2 teaspoon of vanilla extract
